Research:

Sophie’s research focuses on the application of thermostable beta-glucanase derived from wild barley in the malting and brewing process. The aim of this project is to improve the extraction of fermentable sugars from barley--generating cost savings and reducing waste in the brewery.

In her undergraduate research, Sophie studied the effects of cold atmospheric plasma on wheat and intermediate wheat grass flour characteristics and dough functionality.
