Junai Gan is interested in the research on baby food to improve infant health. Her current project is on the protein digestion of complementary foods, which are foods introduced to weaning infants other than their mothers’ milk. The introduction of complementary foods has profound health impact, and solving questions on this interdisciplinary research requires the integration of ideas and techniques from different fields. Integrating analytical, clinical and computational resources, she is going to determine how the protein molecules in complementary foods are changed during the digestion process. Her work is aiming for a better understanding of protein digestion and a translational strategy to improve baby food.
