The Program


Goals

The goals of the John E. Kinsella Endowed Chair Program are to foster cross-disciplinary activities in the College of Agricultural and Environmental Sciences and the University of California, Davis aimed towards establishing and expanding our knowledge-base on how foods provide nutritional value and further to apply this understanding into science into technologies to change the food supply and improve nutrition and health.

In Research

  • to develop a focus for scientific study of foods as sources of nutrients, and their important roles in determining the effective delivery of these nutrients to appropriate tissues
  • to explore the biological consequences of nutrients and the mans by which specific foods affect their activity
  • to develop biomarkers of the consumption of particular nutrients in foods and their metabolic consequences

In Training

  • to foster training of students in the chemical, physical, and nutritional properties of foods and specific molecules within food matrices
  • to promote collaborative interactions between students of disparate backgrounds and goals within the University aimed at the improvement of health through foods
  • to educate the public on the consequences of diet on health, what are appropriate foods for ingesting specific nutrients, and what are the biological activities and benefits that they provide
